Lemon Balm Cake with Blueberries

Lemon Balm Cake with Blueberries

  • 3/4 cup milk
  • 1 or 2 Tbsp. lemon balm
  • 1 Tbsp. lemongrass
  • 1 Tbsp. lemon thyme
  • 2 cups flour
  • 1 1/2 tsp. baking powder
  • 1/4 tsp. salt
  • 2 eggs
  • 1 cup sugar
  • 6 Tbsp. margarine or butter, softened
  • 1 Tbsp. grated lemon zest
  • 2 cups fresh blueberries

Preheat oven to 350 degrees. Scald milk, Place milk, lemon balm, lemongrass, and lemon thyme in food processor or blender. Process until well chopped. Set aside to allow flavors to blend. Combine flour, baking powder, and salt. Place milk mixture and flour mixture in a food processor. Add eggs, sugar, butter, and lemon zest. Blend well until dough is mixed. Combine the blueberries into the dough by hand. Pour mixture into greased 9-inch by 5-inch loaf pan. Bake for about 50 minutes. Test with a toothpick, if batter remains on toothpick, bake for a few more minutes. Glaze if desired, or serve dusted with powdered sugar. Makes 1 loaf.

Zentangle

So there is a new to me art form which I have totally fallen in love with , it is called Zentangle's. I have alway's envied those who posses the ability to draw. It was something that I just could not grasp, heck my 7 year old can draw a better stick person then I can LOL ! I am running to town today to pick up some watercolor paper and some nice new fine tipped pens to give this a go :) If you would like to see what it is I am talking about check out some of these blogs :)

Back to Twilight



I have picked up my Twilight again and it will be my focus piece until I get page 3 finished off ( it has a nasty yellow tint in this photo - don't know why as it does not look like this in person). If it's not finished by this weekend then I will take a break from it Saturday and Sunday to work on Lissandrea for the SAL. There are 3,564 stitches in this page !! I better stay off of Facebook if I want to get it all done in 5 days ;)

Here is my update on Lissandrea - this is week 1 of the SAL from the 123 Message board. I am so happy I got page 1 finished off and now i am starting to block in page 2. I worked on her a little bit Friday , all day Saturday and a tiny bit this morning. I have to say that so far this SAL is helping to keep me motivated on her, I like devoting Saturday's to her. I may go ahead and up it to all day Saturday and Sunday.



I have pulled out the block for the CQ RR - this is Susan's block . I really need to get my butt in gear as Friday it needs to be in the mail for it's trip over the pond to Janet. I really don't know what I am going to do yet - I am off to go check out the blog Pin Tangle for some idea's :) If you click the blog name it will bring you there

Spring Fling Exchange

I am so excited for Spring to come , I believe that I have seen enough of this white stuff to last me quite a while :) Since the first day of Spring is right around the bend ( March 20th is the Spring Equinox this year) I though it would be a wonderful time to host an exchange !

Terra Fairy and a Ornament


This is what I was able to finish on Terra this week, not as much as I had hoped for but I am a little over 1900 stitches so i am fairly pleased. Only 600 more stitches to go before the top 3 rows are done :)



I was also able to get my febuary ornament done this week - well the stitching anyways. I think that I will be finishing this as a flat padded ornament but I need to get to Marden's in Waterville next week and pick up some trim, cording and a tassel.
